In the nose (olfactory phase):
Medium-high green fruitiness, very complex and balanced.
In the foreground, olive leaf, fresh grass and green almond (alloza) typical of the Hojiblanca variety, accompanied by:
•Green apple and banana.
•Notes of tomato, artichoke and aromatic herbs.
•Light floral touches and a hint of sweet almond that rounds out the whole.
A clean, elegant and very expressive nose, where vegetal freshness harmonizes with soft fruity nuances.
In the mouth (taste phase):
Sweet and smooth entry, followed by a medium bitterness and a medium-high spiciness, well balanced.
The following are noticeable on the palate:
•Flavors of green grass, olive leaf, almond and green apple.
•A subtle floral and almond note that softens the overall effect.
• Firm texture, with body, and a progressive and elegant feel.
The final spiciness appears gently and leaves a long and clean persistence, with a vegetal and slightly almondy aftertaste.
Final feeling:
A harmonious, complex and persistent oil that combines vigor and freshness with fruity sweetness.
