Monovarietal of the 100% Picual variety from early harvest.
Intense green color, clean, bright and of medium-high density.
It has a texture rich in chlorophyll and polyphenols, typical of early harvesting, but with great clarity and visual purity.
In the nose (olfactory phase):
Medium-high green fruitiness, fresh, complex and very balanced.
They predominate:
•Olive leaf, freshly cut grass and tomato plant, characteristics of the early Picual.
•Fig tree, green almond and light hints of green banana and apple.
•Secondary notes of artichoke and tomato plant, with a subtle background of green fruits and aromatic herbs (oregano, thyme).
A clean, intense and elegant nose, without bitter or sharp stridency, with great vegetal and fruity harmony.
In the mouth (taste phase):
Sweet and enveloping entry, followed by a medium bitterness and a medium spiciness, very well integrated.
On the palate, the nuances of the following are confirmed:
•Green grass, almond, olive leaf and tomato plant.
•Aftertaste of fig and mild bitter almond, with a fresh and persistent finish.
•Dense, structured texture, but with a fluid and elegant feel.
The balance between initial sweetness, bitterness and spiciness is excellent: the oil is round, firm and harmonious, without aggressive notes.
Final feeling:
A green-profiled oil, powerful yet elegant, that combines intensity with a silky and persistent feel.
It expresses the classic personality of the Picual —rich in herbaceous and leaf nuances— but with smoothness and harmony in the whole.
Ideal for raw consumption: toast, gazpacho, roasted vegetables, white meats or fatty fish, where it provides structure and freshness without overpowering the dish.
